Dark Chocolate Covered Granola

Over here in The Smart Kitchen, ” baking” has come to mean “just cover everything in melted dark chocolate.”IMG_8030 (1024x683)

I’m quite obviously OK with that.IMG_8037 (1024x683)

And when you think about it, covering granola in chocolate gives you everything you could ever want in one, tasty handful.IMG_8059 (1024x683)

[Except maybe peanut butter?]IMG_8046 (1024x683)

Chocolate covered almonds or walnuts or pecans…plus chocolate covered dried fruit. [I’m partial to the raisins myself.]IMG_8057 (1024x683)

It takes less than 30 minutes to turn into a giant slab of dark chocolate granola bark–IMG_8083 (1024x683)

–which you can break up into reasonable sized chunks for snacking.IMG_8097 (1024x683)

Dark Chocolate Covered Granola

5-6 cups granola

1 1/4 cups dark chocolate chips

  1. Pour granola in a large mixing bowl.
  2. In a microwave safe bowl, melt chocolate: begin with 1 minute, 20 seconds on high, then continue cooking at 10 second intervals, stirring well in between, until melted.
  3. Pour chocolate over granola.
  4. Stir very well to incorporate.
  5. Spread chocolate granola mixture on a wax paper lined baking sheet.
  6. Allow to cool in the refrigerator until solid.
  7. Break into chunks for snacking!
