Caramel Apple Nutty Butter [Making It Strictly Vegan + Giveaway Winner]

It’s a good thing (most) nut butter is vegan.Because if it wasn’t, I’d be severely suffering through the Vegan MoFo.

Every day I say to myself, “Self, tonight you will NOT take your spoon to that nut butter jar. You will portion it out and consume it in a dignified manner.” And every night, I find myself staring at the same sight.

Would YOU be able to resisthomemade pers-cinna-mmon almond butter?

It’ a good source of  healthy fat and protein, which I obviously need as an (accidental) vegan* runner, so…sorry, but I’m not sorry that I make, buy, and eat so much of the stuff. :)

*The only thing animalistic about it is the intensity with which I consume it…

But I have a confession:

Caramel Apple Nutty Butterisn’t 100% vegan.

The recipe involves the tiniest smidge of honey swirled in at the end, to brighten up the flavor and add a lingering sweetness. [I also use some butter extract, which is vegan.]

Honey is a sticky* issue in the vegan world, and one I’m not going to tackle here, except to say that as a self-proclaimed vegan with benefits it didn’t concern me that much.

However, in the pursuit of honesty, I had to reveal the truth, especially as I have been getting lots of questions about whether or not Nutty Butter is vegan.

*Pun intended. If people asked, I always told them about the honey, and let them make the decision for themselves. But in the spirit of the Vegan Month of Food, I wondered if I could eliminate the honey and still maintain the deliciously addictive sweet and buttery flavor of the caramel apple flavor. As I said, it was such a small amount, I didn’t think it would make too big of a difference.

And I was right.

I was able to make two versions–one without honey, and one substituting agave–that still were just as ‘this tastes eerily like a caramel apple, especially when you put it on an actual seasonal orb of crisp, tart sweetness’ fabulous as the original.

Trust me. I submitted them to a full battery of quality control checks.

That being said, I am keeping the original recipe in tact for now. This has mostly to do with VA Dept. of Agriculture approval on my recipes, and a little to do with the fact that I still like having a snippet of honey in there.

I am, however, working on getting the vegan version approved for those of you who would prefer not to have honey in your diet, even in the smallest amounts.

haa, I have had TWO honey conversations just this morning. one where we ended up saying “StealingFromTheBees would be a good band name.

this sounds the awesomest so far.

I much prefer honey to agave in nut butters! I love agave too, but not in my nut butters! However, I don’t think you could make a bad nutty butter. Question for you… which of your nutty butters don’t have peanuts??

YUM. Also, my new diet change (on the blog today) actually has nut butters on the DO NOT EAT LIST.

Um, no thanks, Jillian. I’ll take your extra carbs, but don’t tell me not to eat nut butter.
