Winning is Awesome.

We’ve reached the end of another week, and–at least for this summer–that can only mean it’s time for anothe edition of Things That Are Awesome. Obviously, if you’ve been following along this week, there can only be one theme of today: Christmas in July!All week long, I’ve been celebrating my favorite (completely made up) holiday of the summer* by offering you a number of fabulous Christmas (in July) presents.

*Aside from my birthday in August, of course. :)

And because we all know winning is awesome* today we shall celebrate the winners of the aforementioned giveaways.

*As long as you deserve it. And are a gracious winner. Obviously.

Let’s go ahead and start with the Nasoya + Spork Foods giveaway, because even though the cookbook and free Nasoya coupons are cool,  I know y’all all really just want to see who won the shorts. [And if you are wondering why I didn’t take a photo of myself IN the shorts, well I did…but then I felt a bit like I was taking sext or soft corn porn pictures so I had to stop.]Drumroll—or should I say booty roll? (is that even a thing?)–please…

I really loved reading all of your amazing suggestions for using tofu. [And even though technically Lindsay didn’t give a tofu suggestion, I’m going to let her win anyway.] I can’t wait to utilize the remaining Nasoya coupons I have in my posession to try them out. :)

Since I’d like to give everyone a gift, I thought I’d let everyone ‘win’ when it comes to my Spork Fed-adapted Cornmeal-Coated Tofu Croquette recipe:

  • 1 14-oz. block extra firm (or firm) tofu
  • 1/2 tsp. salt
  • 3/4 tsp. Tuscan seasoning (or your favorite herb blend)
  • 1 tsp. dried thyme
  • 1/4 tsp. ground black pepper
  • 1/3 cup white cornmeal
  • 1 Tbsp. red wine vinegar
  • 3-4 tsp. dijon mustard
  • 1 Tbsp. agave nectar
  • 1/2 cup white cornmeal, seasoned with a dash of salt, pepper, and Tuscan seasoning, for coating

Crumble tofu into a bowl. Add remaining ingredients–except extra cornmeal. Mix well. Use your hands to shape small croquettes (about 15-20). Coat each croquette in seasoned cornmal. Cook in a hot frying pan, coated with cooking spray or oil, until browned.


From extra firm, to extra crunchy…*
