Ginger Mango Guacamole

I may have gone a little overboard on the avocado last weekend.What can I say? They were on sale.

You’d think I would have had enough to add to my Wild Rice Salad, but there was a slight problem…

Mangoes were also on sale.

And when you’ve got avocado and mango––and leftover lime, red onion, and cilantro from other culinary adventures––there’s really only one thing to do.Make guacamole.*

*I initially wanted to put an exclamation point here. But that would indicate surprise. Who was surprised? Anyone?And while the concept of Mango Guacamole is delicious on its own, to be sure…why leave something extraordinary, when you could make it supradinary!*

*supradinary [adj.]: not just out of the ordinary (see ‘extra’), but above it

Try not to get chip crumbs all over the keyboard when you accidentally jam ’em into the screen like a bird flying into a glass door.

Ginger Mango Guacamole

  • 1 cup ripe avocado (about 1 large)
  • 3/4 chopped mango
  • 3 Tbsp. red onion, finely chopped
  • 2 Tbsp. fresh cilantro, finely chopped
  • 1-2 Tbsp. lime juice
  • 1/4 tsp. salt
  • 1 tsp. minced ginger
  1. Combine all ingredients in a bowl.
  2. Mash and stir with a fork until all ingredients are mixed, but guacamole is still slightly chunky.
  3. Serve with salty chips!
