Peanut Butter Quinoa Cookies

One of the benefits of attending the Health Starts Here meetup at Whole Foods last week was an e-mail in my inbox bearing the title “Quinoa Cookies.”

Quinoa Cookies?
Sounded quin-d of amazing.*
*I had to.

Starting with a blend of cooked quinoa, peanut butter, honey, and oats (and a dash of salt)…

…I imagine the mix-in possibilities from there are endless.
I went with coconut and cranberry, evoking my favorite store-bought flavored peanut butter* of all time.

*R.I.P Archer Farms Vanilla Cranberry.

I had so much fun making these cookies* [and so much (could not control myself) fun eating them]–
*Yes, sometimes I get so excited I come straight home and start cooking without removing my winter coat.

…that I used them for my post on Breathe Magazine’s blog today.

I want these! I’ve been craving cookies like crazy but don’t have any gluten-free flours (too expensive). I do have quinoa flakes, though!

What a great tribute to your favorite peanut butter:) I think dried cranberries are one of the best cookie add ins. They are 100 times more delicious than plain raisins.

These look delicious! You had me at quinoa cookies and then you went and said there is coconut in them (!!!) Can’t wait to make a batch :-)
