A Tater in a Haystack

I have this friend name Emily, whom I’ve never actually met.
Technically, I guess she is a (blogger)* friend.
*I put the word blogger in parentheses, because once you start communicating via e-mail and gchat, I feel as though you move slightly beyond just being “blogger friends.”

She blogs. I blog. Somehow we found each others’ blogs, but that was so long ago that I don’t even remember how it happened.

But even though we’ve never met, I have a lot to thank her* for.

*And “Big Guy,” who did once offer to let me come live with them. Or move us all to Louisiana.

Most significant (at the moment)?

She gave me my new favorite side dish.
You see, after I blogged about using my Green Goddess Yogurt Dressing to cover zucchini and yellow squash “ribbons”… …Emily reminded me that she and “Big Guy” had once made roasted sweet potato ribbons. And y’all know once I had that idea in my head, it wasn’t going anywhere until I tried it.

So I did. [About four times now.*]

*And I just bought another sweet potato.All you do to make what I now lovingly refer to as Sweet Potato Straw (or Sweet Tater Straw if I’m feeling a lil’ more country and a little less rock ‘n roll^) is peel a sweet potato, and, once you’ve removed at least MOST of the skin, just keep peeling…
^[Fingers Crossed] Please get that reference.You’ll end up with a massive amount of sweet potato ribbons (henceforth referred to as “straw”)……and perhaps a little bit of a psuedo sweet potato fry that’s just too small to deal with.

Toss everything (even the fake-out, wannabe accidental “fries”) onto a baking sheet. Spray ‘em with cooking spray and sprinkle salt, pepper, and any other seasonings you might like all over them. [I prefer a slight dash of cinnamon, a sprinkle of red pepper flakes or cayenne pepper, and a nice dose of cumin.]Stir them all up with your hands and pile them up in the middle of the baking sheet.You are going to bake these (at 375 degrees) for 45 minutes, stopping ever 15 minutes to stir them up and around.Some of the edges will get extra toasty…but those just taste like extra crispy sweet potato fries…and y’all know you’re always trying to get your fries to be a little more crispy, right?They are super fun to eat…and highly addicting. You’ll see the giant mound of sweet potato straw in the pile of the pan and think you’ll have enough to share with a friend (or your husband or live-in ‘person’)…but you won’t. You really won’t.Some are slightly soft, and some are slightly crispy…and overall it is the best and most fun way to eat a sweet potato I’ve tried in a very long time.If you do manage to save any from digestible destruction, they taste yummy cold the next day as well.

I like them on top of a cottage cheese mess.

(And then eating it with my Soup Stix.)
Oh y’all. Just go out and get a sweet potato already.And then thank Emily. :)

YAY! You made the sweet tator ribbons. So glad you've enjoyed them…4 times.

And…Big Guy isn't the husband…yet. haha…We're working on that, Sarah. ;)

Oh my goodness – those are adorable. I definitely see them as a great topping for salads or soups. Or simply drenched in ketchup, which is how I roll like a 5 year old.

This is dangerous for me as I can eat my weight in sweet potatoes! Thanks for the how to (and Emily) and for the extra 10 pounds I'll gain from eating these like mad! ;)
